Bison Burgers

  • 2 lb ground bison
  • 1 tbsp worchestor sauce
  • 1/2 onion chopped
  • 2 garlic cloves minced
  • 1/2 cup regular or Italian breadcrumbs
  • 1 tsp ground mustard
  • 1 tsp paprika
  • 1 tsp dried parsley
  • 1/2 tsp coriander
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 3 tbsp butter


  • Brioche Bun
  • Dijon Mayo
  • Jalapenos
  • Tomatoes
  • Lettuce
  • Pepper Jack/White Cheddar Cheese

Sauteed Onions

  • 1 large white onion
  • 1 tbsp butter
  • 1 tbsp olive oil

Dijon Mustard Sauce

  • 1 cup avocado mayo whatever mayo you like
  • 2 tbsp dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper


Bison Burgers

  • In a large bowl combine all of the ingredients together. Make sure to not overwork the meat just mix enough for it to all be combined.
  • Form patties that are slightly smaller than a hamburger bun and allow them to sit at room temperature for about 25-30 minutes.
  • Melt butter over medium-high heat in a cast-iron pan. Cook patties on each side for about 3 minutes or until the internal temperature reaches 140 degrees F. Add cheese and cook for 1 minute until melted.
  • Allow the burgers to rest for 5 minutes.

Sauteed Onions

  • Heat oil and butter over medium-high heat, add onions, and cook for 3 minutes.
  • Reduce heat to low and cover for 20 minutes.

Dijon Mustard sauce

  • Combine all of the ingredients together in a medium-size bowl.
