This white bean soup makes the perfect quick and healthy dinner! I have been adding more fiber into my diet and this soup is loaded with it from the beans. You do not have to use canned beans but I did to save time.

White Bean Soup
Ingredients
- 1 tbsp olive oil
- 1 onion chopped
- 3 garlic cloves minced
- 2-3 large carrots chopped
- 2-3 celery stalks chopped
- 6 cups vegetable broth
- 1-2 sprigs thyme
- 1 sprigs Rosemary
- 1 tsp oregano
- salt/pepper to liking
- 45 oz cannellini beans
- 2 cups spinach
- 1/3 cup grated parmesan for serving
- parsley garnish
Instructions
- Heat olive oil in a large pot or saucepan over medium heat. Add onion, celery, and carrots, and cook for 5 minutes. Add in the garlic and cook for 2 minutes.
- Add in the thyme, rosemary, oregano, salt, pepper, chicken broth, and beans. Bring to a boil and simmer for 15 minutes. Add in the spinach and cook for 2 minutes.
- Garnish with freshly grated parmesan cheese and chopped parsley.
