Some days I love being in the kitchen for hours just cooking but other days I just want something that is nice and easy! That is why I love dishes like this one-pot creamy vegetable pasta.
I like this recipe because it is a quick dinner but also vegetarian! If you are looking for more vegetarians recipes then you need to add this one to your list.


What to Serve with One-Pot Creamy Vegetable Pasta
I love making side salads with salads but if I am feeling wild I will make homemade bread. There is nothing compared to homemade bread seriously! I am still trying to create a healthier bread but that is for another post.
This recipe is very filling especially if you use chickpea pasta so you can skip out on the side. If you want to add more protein you can add shrimp or any meat of your choice. I think ground turkey or Italian sausage would go really well with it!
Substitutions
- If you are not into chickpea pasta then you can use whatever you like! I just try to stick with gluten-free pasta because regular white pasta can make be very bloated, plus it is fewer carbs.
- You can use greek yogurt instead of cream cheese to make it healthier and ditch the parmesan cheese. However, I think the cream cheese is what really makes this dish!
- Frozen spinach will work in this recipe as well. Honestly, you can add any vegetables that you like. In my video showing you how to make it, I added mushrooms and it was delicious!

Ingredients:
- Chickpea Pasta
- Olive Oil
- White Onion
- Garlic Cloves
- Oregano
- Red Pepper Flakes
- Dried Basil
- Salt/Pepper
- Diced Tomatoes
- Tomato Pasta
- Chicken Broth
- Cream Cheese
- Parmesan Cheese
- Spinach
How to Make One-Pot Creamy Vegetable Pasta
- Boil water in a large pot and cook pasta according to instructions.
- Heat olive oil over medium heat, add onions, sautee for 5 minutes.
- Add minced garlic, sautee for 1 minute.
- Add diced tomatoes with juices and all of the seasonings. Stir everything together.
- Add in chicken broth and tomato paste.
- Simmer for 5 minutes or until all of the tomato paste has dissolved.
- Reduce heat to low, add cream cheese cut into small cubes, whisk into sauce until the cream cheese is completely dissolved.
- Add half of the parmesan, whisk in sauce, add the rest. Simmer for 5 minutes.
- Once your pasta is finished add it into the sauce with the spinach and mix everything together. After, everything is evenly combined, turn down the heat, and allow spinach to wilt for about 3 minutes.
- Top with parmesan cheese and fresh black pepper!

One-Pot Creamy Vegetable Pasta Recipe
Creamy Tomato and Spinach Pasta
Ingredients
- 3-4 cups chickpea pasta any pasta works
- 1 tbsp olive oil
- 1 white onion chopped
- 4 garlic cloves minced
- 1 15 oz. diced tomatoes 1 can
- 1/2 tsp oregano
- 1/4 tsp red pepper flakes optional
- 1/2 tsp dried basil
- salt/pepper to liking
- 2 tbsp tomato paste
- 1/2 cup chicken broth
- 2 oz. cream cheese
- 1/4 cup grated parmesan
- 6 oz. spinach 2-3 handfuls
Instructions
- Bring a large pot of water to boil and cook the pasta based on the instructions.
- Heat olive oil over medium heat. Add onions and saute for 5 minutes then add garlic, saute for 1 minute.
- Add the diced tomatoes (with juices), basil, oregano, red pepper flakes, salt, and pepper. Stir everything together.
- Add chicken broth and tomato paste. Simmer for 5 minutes or until tomato paste dissolves.
- Reduce heat to low. Cut cream cheese into small cubes and whisk them into the sauce until it has dissolved and becomes creamy.
- Add half of the parmesan and whisk it into the sauce, once it has blended in add the rest and simmer until combined. Simmer for 5 minutes.
- Once your pasta is finished add it into the sauce with the spinach and mix everything together. After, everything is evenly combined, turn down the heat, and allow spinach to wilt for about 3 minutes.
- Top with parmesan cheese and fresh black pepper!
