Ingredients for One Pan Greek Shrimp and Orzo
- 2 tbsp olive oil
- 1/2 lb shrimp
- 1 shallot
- 1 pint grape or cherry tomatoes halved
- 3 garlic cloves minced
- 2 cups spinach
- 1 cup orzo cooked
- 1/2 cup crumbled feta
- 1/2 cup kalamata olives
- 1/2 tsp oregano
- 1/4 tsp pink salt
- 1/4 tsp pepper
- 1/2 tsp paprika
- 1/2 lemon
- 1/4 tsp dill


How to Make One Pan Greek Shrimp and Orzo
- Heat 1 tbsp of olive oil over a medium-high heat in a skillet. Add shrimp once oil is hot, season with hot and pepper. Sautee until shrimp is opaque and cooked through. Remove shrimp and set aside.
- In the same skillet add 1 tbsp of olive oil over medium heat. Add shallot, cherry/grape tomatoes, oregano, paprika, salt, and pepper. Sautee for 3-5 minutes. Add minced garlic and spinach. Sautee until spinach cooks down.
- Add cooked orzo and shrimp into the skillet. Season again with oregano, salt, and pepper. Mix everything together. Add olives, feta, and juice from half a lemon. Mix everything. Garnish with dill.

Tips for Making One Pan Greek Shrimp and Orzo
Use Whole Grain Orzo
You can use regular orzo for this recipe or even white/brown rice if that is what you have on hand. However, I like to use whole grain orzo because it contains nutrients and fiber. Whole grains are not processed like regular pasta and rice which makes them a healthier alternative.
Add Extra Vegetables
I have seen recipes like this one pan greek shrimp and orzo dish but they never add spinach. Spinach will cook down a lot so you are able to use a couple of cups which will give you extra greens for the day. I love adding spinach because it is full of nutrients like iron, folate, and potassium.
Use Fresh Herbs
Dried or fresh herbs work for this recipe but of course, fresh herbs are healthier and give a stronger taste. I have tried using both and definitely recommended using fresh herbs but you will still have a delicious dish with dried herbs.
