This low-carb chicken caprese has been one of my favorite meals this summer but I will continue to make it during the fall and winter. What is Caprese?
Caprese is typically known for being a salad that has tomatoes, mozzarella, basil, olive oil, and herbs. This delicious dish originates from Capri, Italy. Caprese does not have to be just a salad but can also be used for pasta, sandwiches, and even pizza. You just need the basic ingredients which include tomatoes, mozzarella, and basil. Olive oil and fresh herbs are not necessary but they add some extra flavor to any caprese dish.

What to Serve With Low-Carb Chicken Caprese
You can serve almost anything with baked chicken caprese but some of my favorite options include fresh pasta, an arugula salad, grilled vegetables, or even putting the chicken on a sandwich. Any salad would go with this baked chicken caprese but I personally love making a simple salad with arugula. I have been obsessed with arugula lately and the flavors all come together when you pair this salad with the chicken. I also like to drizzle some balsamic glaze on top of everything before I enjoy the meal.
Low Carb Chicken Caprese
Ingredients
- 4 chicken breast
- 1 tbsp olive oil
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- salt/pepper to liking
- 6-8 oz mozerella
- 2 tomatoes sliced
- handful fresh basil
- balsamic glaze drizzle on top
Instructions
- Cut chicken in half, lengthwise, if you like a thinner cut. Drizzle olive oil over each piece of chicken, then season on both sides.
- Cook chicken on each side for about 3-5 minutes.
- Top each slice of chicken with a slice of tomato and mozzarella.
- Bake chicken until the mozzarella is melted for about 10 minutes.
- Top with basil and balsamic.
