I have been obsessed with making soups in the crockpot because you throw everything together and then let it cook for a few hours. This allows all flavors to come together without making a huge mess. Crockpot Taco Soup Ingredients
This taco soup basically uses ingredients that you would put into a taco plus some staple ingredients that you most likely have in your pantry.
- Ground Beef
- Onion
- Garlic Cloves
- Red Bell Pepper
- Fire Roasted Tomatoes
- Beef Broth
- Corn
- Black Beans
- Cream Cheese
- Taco Seasonings
I used frozen corn but canned or fresh corn works just as well. I like this recipe because you can modify it to how you like. For example, if you do not like corn or black beans you are able to just leave them out. If you like spicy food try adding in a jalapeno or some cayenne powder.
I have also made this recipe using ground turkey instead of beef and it was just as delicious! Ground turkey is leaner than beef which makes it a healthier option if you are trying to watch your fat.

Equipment

Ingredients
- 1 lb ground beef
- 1 onion chopped
- 1 red bell pepper chopped
- 3 garlic cloves minced
- 20 oz fire roasted tomatoes
- 4 cups low sodium beef or chicken broth
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tbsp chili powder
- salt/pepper to liking
- 12 oz corn
- 15 oz black beans
- 8 oz cream cheese
Instructions
- In a medium-sized pan cook the ground beef with the onions and red pepper until no longer pink. Add in the minced garlic and cook for 1 minute.
- Add all of the ingredients into the crockpot except for the cream cheese. Cook on high for 2-4 hours.
- After 2 hours of cooking add in the cream cheese, stir everything together, and allow to cook for the remaining time.
- Serve and garnish with cilantro, green onions, jalapenos, cheese, tortilla strips/chips, or sour cream.
