Easy Penne alla Vodka Recipe
How to make easy penne all vodka at home in less than 30 minutes. This penne all vodka is an easy dinner idea that everyone will love! You can use regular pasta, whole-wheat pasta, or chickpea pasta like I did.
- 16 oz chickpea penne pasta any pasta works
- 2 tbsp olive oil
- 1 white onion diced
- 3 garlic cloves minced
- 1 tsp red pepper flakes
- 1 tbsp Italian seasoning
- salt/pepper to liking
- 28 oz Italian whole tomatoes
- 1 cup vodka
- 1 cup heavy cream
- 1/2 cup pasta water
- 3/4 cup parmesan cheese
- fresh basil for serving
Cook pasta according to instructions. Save 1/2 cup of pasta water.
Add olive oil to a pan over medium heat, sautee onions for 5 minutes with salt and pepper. Add an extra pinch of red pepper flakes if you like spicy.
Add garlic, saute for 1 minute.
Add tomatoes, vodka, red pepper flakes, Italian seasoning salt, and pepper, bring to a boil and simmer for 15 minutes.
Add pasta water, heavy cream, and parmesan cheese, simmer for 1 minute.
Add pasta into the sauce. Garnish with basil and parmesan cheese.
