These spicy shrimp sushi stacks are delicious and very easy to make! They consist of three layers: sushi rice, avocado and cucumber, and spicy shrimp. I like to top them off with a wasabi sauce and everything but the bagel seasoning.
I am currently pregnant so I am not able to eat traditional sushi at the moment plus I am not the biggest fan of raw fish anyways. Typically, I get a California roll but those can get boring or a J.B tempura roll which isn’t always the healthiest. These stacks are perfect for me because they are completely safe to eat plus they are more interesting than a California roll in my opinion.

Substitutions
- Rice: Instead of making sushi rice with the rice vinegar and sugar you can make pre made sushi rice to make it easier.
- Shrimp: You can use any fish that you want like salmon or tuna.
- Spicy Mayo: If you have big bang sauce on hand you can use that instead of making a spicy mayo, however I prefer making it so I can adjust the heat.
- Wasabi Sauce: If you do not like spicy food then just skip this part.
- Everything But The Bagel Seasoning: I love adding this seasoning on top but you could use sesame seeds instead.

What You Will Need to Make Spicy Shrimp Sushi Stacks:
- White Rice
- Water
- Rice Vinegar
- Sugar
- Salt
- Avocado
- Light Mayo
- Cucumber
- Lime
- Shrimp
- Sriracha
- Everything but the bagel seasoning (optional)
Wasabi Sauce:
- Light Mayo
- Rice Vinegar
- Wasabi Paste
- Sesame Oil

Spicy Shrimp Sushi Stacks
I love making these spicy shrimp sushi stacks because they are delicious and makes me feel like I am having real sushi, without having to go to a restaurant.
Servings: 4 people
Ingredients
Sushi Rice
- 1 cup white rice
- 2 cups water
- 2 tbsp rice vinegar
- 1 tsp pink salt regular works
Avocado Cucumber Layer
- 1 cup avocado mashed
- 1 cup cucumber diced
- 1 tbsp lime juice
- 1/2 tsp pink salt
Spicy Shrimp
- 1/2 lb shrimp diced
- 4 tbsp light mayo
- 1 1/2 tbsp sriracha
Wasabi Sauce
- 1/4 cup light mayo
- 1 tbsp rice vinegar
- 1/2 tbsp wasabi paste
- 1 tsp sesame oil
Instructions
Sushi Rice
- Bring rice and water to a boil, cover and simmer for 15 minutes, cool.
- Add rice vinegar, sugar, and salt.
Avocado Cucumber Layer
- Mix all ingredients together.
Spicy Shrimp
- Mix all shrimp ingredients together.
Wasabi Sauce
- Mix all wasabi sauce ingredients together.
Sushi Stacks
- Pack rice down into a 1 cup measuring cup or a small sauce bowl tightly. Top with avocado, shrimp, then drizzle wasabi sauce over top.
