Low Carb Fajita Casserole
This low-carb fajita casserole is a quick dinner recipe that you can enjoy if you are on a low-carb diet or even if you are not.

Ingredients
- 2 tbsp olive oil
- 1 lb chicken thighs
- 4 bell peppers sliced
- 1 onion sliced
- 1 jalapeno
- 2 garlic cloves minced
- 4 oz cream cheese
- 1 cup sour cream
- 1 cup Mexican cheese
- 2 tbsp cilantro
Taco Seasoning
- 1 tbsp chili powder
- 2 tsp onion powder
- 3 tsp oregano
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp paprika
- 1/4 tsp cayenne
- salt/pepper to liking
Instructions
- Preheat oven to 350 degrees.
- Cook the chicken for about 5-7 minutes on each side or until the chicken is thoroughly cooked through. Set aside and shred.
- Sautee onions and peppers until they are tender.
- Add shredded chicken back to the pot with the onions and peppers. Stir in seasoning, cream cheese, sour cream, cilantro, and half of the cheese. Stir everything together.
- Add everything to a greased baking sheet then sprinkle the rest of the cheese on top. Bake for 15-20 minutes or until the cheese is melted.
- Garnish with avocado, jalapenos, sour cream, hot sauce, or cilantro.
