This healthy greek pasta salad uses a variety of vegetables that all have amazing benefits for your health. When you go to buy the items for this recipe you will notice most of the ingredients are on the outside of the store beside the pasta. It is important to try to shop outside of the store because in the center is where all the processed foods are.
Another tip is to use whole grain pasta instead of regular pasta so it is less processed and you get the fiber from the whole grains. Whenever I make pasta I try to use either whole grain, whole wheat, or chickpea pasta to receive some health benefits.

I love Greek and Mediterranean food because everything is so fresh and delicious! Not to mention that people who live in Greece typically have a longer lifespan. I believe the reason for this is due to the foods the fact that they do not each much-processed foods and are very active. In America, everything is processed, we even have processed salads. I love making my own salads with fresh vegetables because they taste better but it also makes you feel better on the inside.
Since it is a pasta salad I like to serve it cold but some people like my boyfriend prefer to heat it up. That is why I love recipes like this, you can customize them to how you want them. If you do not like feta cheese, try goat cheese. If you don’t like or cant have cheese just skip it altogether.
My favorite part of this recipe is the dressing which uses ingredients you probably already have in your pantry. I have started to make my own salad dressings instead of buying them at the store because those ones usually have added ingredients that are not the best for you.

- Add salt to pasta water.
- Allow greek pasta salad to chill in the refrigerator for at least an hour.
- Use short pasta that is bite sized.
- Make sure not to overcook the pasta.

- Olive Oil
- Red Wine Vinegar
- Lemon Juice
- Oregano
- Basil
- Dill
- Garlic Cloves
- Salt
- Pepper

- 16 oz whole-grain short pasta regular short pasta works as well
- 1 cucumber half-moons
- 1 pint grape tomatoes halved
- 1/2 red onion
- 1/2 cup kalamata olives
- 1/2 cup feta cheese
- 1/2 cup fresh parsley
Dressing
- 1/2 cup olive oil
- 2 garlic cloves minced
- 3 tbsp red wine vinegar
- 2 tbsp lemon juice
- 1 1/2 tsp dried oregano
- 1/4 tsp dried basil
- 1/4 tsp dried dill
- salt/pepper to liking
Instructions
- Cook pasta according to the instructions and allow it to cool.
- Mix together all of the salad ingredients in a medium-sized bowl.
- Mix together all of the dressing ingredients in a small bowl. Add dressing to salad and toss.
- Refrigerator for at least 1-2 hours before serving.
