This Grilled Chicken with Chimichurri Sauce is one of my favorite recipes that is healthy and easy to make. If you are looking for a sauce that is not full of a bunch of crap you need to try chimichurri! All of the ingredients are fresh which gives the grilled chicken a delicious flavor.
I love serving this dish because it is pleasing to look at but also because everyone always loves it! You can serve it with a side salad which is my favorite because you can add some of the chimichurri sauce to it. Another healthy option is to grill up some vegetables while you are making the chicken.

All About Chimichurri
Chimichurri is a sauce that is not cooked and goes perfect with chicken or steak. I like to grill whatever meat I am using when pairing it with chimichurri because it helps to bring out the flavor.
Chimichurri takes about 5 minutes to make plus you only need a few fresh ingredients and a food processor. The base in this sauce is olive oil paired with fresh herbs and a few seasonings.

Another option is to add cilantro which I have done in the past but I prefer using just parsley.

- Olive Oil
- Cilantro
- Chilies/Jalapeno
- Red Wine Vinegar
- Oregano
- Red Pepper Flakes
- Salt/Pepper

Grilled Chicken with Chimichurri Sauce
Ingredients
Grilled Chicken
- 4 boneless chicken breasts cut into 1/2 pieces
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp corriander
- 1/2 tsp cayenne
- 1 tsp italian seasoning
- salt/pepper to liking
Chimichurri Sauce
- 1/2 cup olive oil
- 1/2 white onion
- 3 garlic cloves
- 1 jalapeno
- 1 cup parsley
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- salt/pepper to liking
Instructions
Grilled Chicken
- In a medium-sized bowl mix together the ingredients for the chicken marinade. Add marinade into a ziplock baggy with chicken and mix together. Allow chicken to chill for 15-20 minutes.
- Add chicken to skewers and cook at 350 degrees for 10-15 minutes.
Chimichurri Sauce
- Add all of the ingredients for the chimichurri sauce into a food processor. Pulse on low until everything comes together. Keep in the refrigerator, until you are ready to serve.
