Edible Cookie Dough Recipe

Edible cookie dough is my favorite treat to have. We all love cookie dough and to be honest I like it way more than I do the actual cookie. This is not a healthy recipe but it is an alternative so you are not exposing yourself to salmonella. I love this recipe and could eat it all day but of course it is always about balance. There are only a few amount of ingredients so you can enjoy your eggless cookie dough in no time!


2 Tablespoons of softened butter

1/4 cup of brown sugar

2 1/2 teaspoons of vanilla extract

1 Tablespoon of milk or almond milk (more if needed)

2 cups of flour or almond flour (add more or less based on how thick you want it)

1 cup of mini chocolate chips

1/8 teaspoon of salt

Leave in fridge for 30 min

Shrimp Tacos Recipe

SHRIMP! My favorite food besides steak that I no longer can have because I stopped eating red meat 🙁 I know very sad. Anyways shrimp tacos are extremely quick and easy to make… literally 15-20 minutes at most. If you do not use cheese and sour cream it is a very healthy meal, but I like to add just a little because you only live once.


– Shrimp


-Olive Oil


-Minced Garlic

-Chopped Onion


-Seasonings (ground cumin, cayenne pepper, old bay blackened, crushed red pepper, pepper, himalayan salt)

-Sour Cream (optional)

-Cheese (optional)

-Hot Sauce (optional)


Put the minced garlic, olive oil, and some butter (if wanted) and let garlic cook for a minute. Then add the shrimp and seasonings, cook until done.

How to Make Guacamole Quick and Easy

I love guacamole and will literally eat it out of the bowl with a spoon lol! The good thing is it is completely healthy and actually has many benefits. Guac is loaded with folate and Vitamin E which will both reduce your risk of heart disease. Avocados have healthy fats and lots of fiber which will help you stay fuller for longer. The healthy fats are are monounsaturated fats that promote weight loss. Something that is very interesting to me is that guacamole can help reduce your chances of cancer. Avocados contain compounds that destroy pre-cancerous oral cells, without harming the healthy cells. Long story short it is mostly the avocados lol, but it is basically just them mashed up with seasoning! This is great for Mexican night, a snack, a spread, or to dip pita chips into! I eye everything out like I do with most things sorry #professional.

Very Quick and Easy Sardine Recipe

This meal is incredibly healthy because we are using sardines. First of all sardines are a great source of protein! In addition they are also loaded with omega-3 fatty acids, calcium, iron, and potassium. Something that is interesting is that one can contains 351 milligrams of bone building calcium, you should be reaching for 1,000 milligrams a day. This seems like a pretty good meal to me plus it keeps you full!


-Sardines (fresh is a much better option of course)

-Onions, Jalapenos, Tomatoes

-Minced Garlic

-Himalayan Salt, Black Pepper, Red Pepper Flakes

-Olive oil



Saute the onions, jalapenos, tomatoes, and the minced garlic. Put the can of sardines in and cook until they are tender. I like to add red pepper for extra spice, and black pepper with himalayan salt.

I have avocado for a very nutritious side, plus I love it 😉

How to Make Fresh Juice

Eating two to three pounds of vegetables a day does not sound ideal to me, and that is why I love juicing. I started juicing a few months ago and now I do it about 5 times a week. It can help with increasing energy levels, stronger immune system, and help aid weight loss. Research shows it many even reduce the chances of a stroke, cancer, and heart diseases, which are the three leading causes of death. MAKE YOUR OWN JUICE! This is so important because the ones you buy in bottles are heated and processed, taking away the vitamins and minerals. A juicer can be on the pricey side but it is definitely worth the investment. This is the juicer I use Omega VERT Slow Juicer VSJ843QS, Square Version, Silver. I love this juicer because it is so easy to use and clean up after. I know there are a lot that take you about two hours to finish everything, this one only takes me around 15-30 minutes!

This is what I use when I make my juice: Carrots, Apples, Spinach, Broccoli, Kale, Beets. I also like to add some berries just to make it a little sweet and easier to drink.

How I Make Empanadas

Empanadas are probably not the best choice when you are on a health kick, but like I always say you got to live life sometimes. I absolutely love empanadas and wanted to learn how to make them myself, now they might not look the best but they sure are good!

Preheat oven to 400


-Ground Beef (You can use any meat, or whatever you want to fill it with)

-Goya Discos Dough

-Goya Sofrito

– Pepper, salt, onion and garlic powder ( I prefer using fresh onion and garlic instead of powder)

– Cayenne Pepper and Ghost Pepper (If you want spice)

-2 Eggs


Cook the ground beef and then turn the heat down to low. Next add the seasonings, I usually just measure with my eyes (Top chef I know). After the meat is cooked and you add the seasonings it is time to add the Goya Sofrito, let it cook down before turning off the heat.

After the liquid has cooked down let the meat cool down before added it to the dough.  Mix two eggs into a bowl and place the dough on a paper plate. You want to make sure you get the eggs all around the edges to make sure it stays together. Next take about a tablespoon of meat and place it to one side.


Flip the other side over to close the empanada making sure it is sticking together. Then take a fork to the edges where the two sides meat and push it down to close it.  Place all of the empanadas on a pan with foil. Brush the top of the empanada with egg to make it more crispy, and put the fork through the middle so you do not get bubbles (You see what happens when you do not like mine lol)

Cook for about 15 minutes at 400 degrees or until the top is lightly brown.

Oven-Roasted Veggies

I love making roasted veggies for a snack instead of chips or something else unhealthy. This recipe only takes about 40 minutes and can last you a few days.

                                                                                 Preheat oven to 400




                                                                                                                                                                                Red Potatoes


Put all veggies into a medium size bowl

Mix all seasonings into a bowl to mix with the veggies

Lay out all of the veggies on a pan and drizzle the sauce over them and mix it so everything is covered.

Cook for 15 minutes flip/stir veggies and cook for another 15 minutes. If you want you can sprinkle parmesan cheese over the veggies. For a meal you can serve it with quinoa or rice with some chicken.

This salad is amazing and is definitely not boring at all! If you do not like spice then do not add the hot sauce or ghost pepper hahaha…. It kept me full for hours and gave me so much energy. I hate just eating just lettuce and spinach so I like to make different salads that I will actually enjoy. Being healthy does not have to mean you just eat greens and thats it, you have to find ways to make it different. I like to add avocado and a little bit of hummus to replace dressing but to keep it healthy.


-Romaine Lettuce




-Hot Sauce

-Ghost Pepper

-Boiled egg

-A FEW sprinkles of goat cheese



Tuna Lettuce Wraps

Tuna Lettuce Wraps

Tuna wraps are my new obsession at the moment. They are sooo easy to make and so much better for you than a tuna sandwich. I like to keep mine very simple but you can add what you like to yours! One of my favorite foods is tacos, lets be honest here they clearly are not the best for you. I make my tuna and put it into a lettuce wrap and pretend it is a taco 😉 Might not be exactly the same but hey its worth the effort!

I start out with a can of tuna and drain all of the liquid out. Once again I am going to be really honest I know mayo is not the best for you, but if I am not going to get my taco at least I am going to have some mayo!! Now I am not saying drench the tuna in it, might as well have the taco at the point. But just a little bit is fine and make sure to use light mayo. I also like to add hot sauce and mix it together because I am a freak for spice!



You do not have to add anything to the tuna but personally I do lol! I like to add a DASH of salt but most of the time I do not. I also like to add pepper, ground cumin, and garlic because HELLO who does not love garlic?? Besides spice which you can see from the cayenne pepper and hot sauce, I also love garlic now my boyfriend might not love it as much after but oh well!



Now mix it all together in a medium size bowl I usually just put a dash of each in with tuna. This is fast and easy meal so clearly I do not want to sit there measuring the amount of seasoning I put in.

Okay okay I know this does not look as good as a taco BUT I promise it is amazing and worth trying!



Next I take two large pieces of romaine lettuce to put the tuna on. And there you have it a quick but healthy meal! If you are trying to eat clean as possible I would suggest ditching the mayo! You can also add toppings like peppers, onion, and avocado. I like to keep mine very simple though!
