This buffalo chicken salad recipe is a huge hit in my house! It is a high protein recipe that can be used for many different recipes. I like to eat it on lettuce wraps, regular wraps, salad, or even just out of the container. I like to meal prep this recipe on a Sunday so I can have it for lunches during the week. When I am trying to lose weight this is one of my go to recipes because it is high in protein but low in carbs!

Buffalo Chicken Salad
This buffalo chicken salad it a healthy meal prep recipe that uses only a few ingredients. I love putting this chicken on lettuce cups or just eating it on its own!
Servings: 6
Ingredients
- 1 lb cooked chicken breast shredded
- 1/4 cup buffalo sauce
- 3/4 cup nonfat greek yogurt
- 1/2 cup celery diced
- 1/3 cup carrots diced
- 1 medium shallot diced
- 1 tbsp parsley fresh
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- salt/pepper to liking
Instructions
- Mix everything into a large bowl and chill for at least 1 hour.
