Blackened Salmon with Mango Salsa
This blackened salmon with mango salsa is full of fresh ingredients and only takes about 30 minutes to make. The mango salsa makes this the perfect dinner for summer!
Servings: 4 people
Ingredients
Blackened Salmon
- 4 6-oz salmon fillets
- 2 tbsp olive oil
- 1 tbsp paprika
- 1 tsp salt
- 3/4 tsp onion powder
- 3/4 tsp garlic powder
- 1/2 tsp oregano
- 1/2 tsp cayenne pepper
- 1/2 tsp thyme
Mango Salsa
- 1 cup mango diced
- 1 large avocado diced
- 3/4 cup red bell pepper chopped
- 1/3 cup red onion chopped
- 1 jalapeno diced
- 1/4 cup cilantro chopped
- 1 tbsp lime juice
- salt/pepper to liking
Instructions
- Preheat oven to 400 degrees.
- In a small bowl mix together the olive oil and seasonings for the salmon.
- Place the salmon in a baking dish and pour the olive oil mixture all over the salmon. Bake for 12-15 minutes or until cooked through.
- In a medium-sized bowl toss all of the ingredients for the salsa.
- Serve salmon with rice and mango salsa on top.
